All about condensed milk:

Working as a home baker, you might have come across the term condensed milk. But do you know what it is? If not, let’s find out. Condensed milk is a thick and sweet syrup that is made using cow’s milk. It is used as a substitute for milk in many desserts and Indian sweets as well.

It is quite easy to make condensed milk at home if you can’t find it easily around you. While condensed milk usually contains cow milk, you can also make a dairy-free version using coconut milk or almond milk.

Keep in mind that condensed milk is different from evaporated milk. Although both come from heating milk and reducing its content, condensed milk has sugar in it. This is why it is often called sweetened condensed milk.

Here’s how you can make it at home:

If you want to ditch the store-bought condensed milk and use homemade one, here are two ways to make it:

1.       Cooking method:

  •       Take 500 grams of milk, whether it is full-fat or low-fat. Along with it, you will need 100 grams of sugar. Remember that milk and sugar must be in the ratio 5:1.
  •       Add milk to a deep bottom pan and let it boil. After it boils, you can add a pinch of baking soda and sugar to it.
  •       Stir it well until the sugar melts.
  •       Reduce the heat then and let it simmer for 30-40 minutes, or until the quantity of milk reduces to half. Keep stirring it to avoid burning.
  •       Remove the pan from the heat and let it cool down.
  •       Your condensed milk is ready for use.

2.       No-cook method:

  •       Take a blender and add a cup of boiling water to it. Then add ¼ cup of margarine into it.
  •       Then add 2 cups of sugar and 4 cups of dry milk powder.
  •       Blend it until the ingredients are mixed well.
  •       Keep scraping the ingredients from the side of the blender to ensure the dry ingredients mix well.
  •       You can store the condensed milk in an air-tight container and use it for your delicious desserts.
